Peaches & Blackberry Crisp

Take 2lbs of firm peaches and cut them into wedges. Take your peaches, 2 cups of blackberries, 1/2 cup granulated sugar, and 2 teaspoons of fresh lemon juice and toss them in a bowl. Set aside. In another bowl, mix 1 cup of quick-cooking oats, 3/4 cup of all purpose flour, 3/4 cup light brown sugar, 1/2 teaspoon salt, 1/2 teaspoon cinnamon, 1/4 teaspoon cardamom, 1/8th teaspoon nutmeg, and 1 stick + 1 tablespoon cold butter. Mix with your fingers to incorporate the butter until crumbly.

In one of our dishes like pictured here, add the fruit mix. Sprinkle the crumble topping over the fruit.

Bake at 375 F for 1 hour or until crumble is golden brown. Cool for 30 minutes before serving.

Ham & Cheese Quiche

Unroll pie crust and form into a pie plate, crimp edges if you’d like.
In a bowl, combine 6 eggs, 3/4 cup of milk or cream, 3/4 teaspoon salt, 1/4 teaspoon black pepper. Thoroughly whisk.
Place 1 cup of cooked and cubed ham, 1/2 cup of cheese, and 3 tablespoons of chopped green onions in the pie crust.
Pour egg mixture into the crust and top with an additional 1/2 cup of shredded cheese.
Bake at 375 for 35-40 minutes until the center is firm. Let cool for 5-10 minutes before serving.

Puff Pastry Wrapped Brie with Fig Jam

Lay out a sheet of puff pastry onto a parchment-lined baking sheet.
Spread fig butter evenly across the pastry dough.
Place an 8 oz wheel of Brie in the center of the sheet and top with more fig butter.
Sprinkle sea salt evenly.
Carefully fold the puff pastry dough around the wheel of cheese, creating a good seal.
Mix together one egg and one tablespoon of water until combined. Brush generously over the pastry. Sprinkle again with sea salt.
Bake at 375 for 25-30 minutes or until golden brown.
